NIÒBĒ Brings Contemporary Fine Dining to Lake Como

Lake Como has long been recognised as one of Italy’s most celebrated gastronomic and cultural destinations, where historic villas, dramatic landscapes, and regional traditions have shaped a distinctive hospitality scene. Today, visitors increasingly seek experiences that unite architecture, cuisine, design, and local identity within a single destination. Restaurants have consequently evolved beyond places to dine, becoming environments where every element—from interiors and materials to wine programmes and culinary philosophy—contributes to a broader narrative. As contemporary gastronomy continues to develop, the relationship between place and dining has become one of its defining characteristics.

The importance of creating memorable dining experiences has been recognised by leading figures in gastronomy. Chef Alain Ducasse has observed, “Cooking is much more than recipes.” His words reflect the idea that cuisine is inseparable from culture, craftsmanship, and environment. Architect Peter Zumthor has similarly stated, “Architecture has its own realm. It has a special physical relationship with life.” Together, these perspectives illustrate how exceptional hospitality increasingly emerges from the dialogue between food, architecture, and the atmosphere that surrounds both.

On the shores of Lake Como, NIÒBĒ introduces a new destination where fine dining, wine culture, and contemporary architecture converge within a restored lakeside villa surrounded by private gardens. Located in Lecco, the restaurant presents an immersive experience in which the landscape influences every aspect of the project, from spatial design to the culinary philosophy developed by Michelin-starred chef Franco Caffara.

Previously awarded a Michelin star at I Tigli al Lago in Como, Chef Caffara draws inspiration from the region’s culinary heritage while presenting a contemporary interpretation of local ingredients and traditional flavours. His approach focuses on clarity, seasonality, and carefully balanced compositions that highlight the identity of the surrounding territory. Could the strongest expression of regional cuisine be found not in recreating tradition, but in thoughtfully reinterpreting it for a contemporary audience?

The architectural concept was developed by Flaviano Capriotti Architetti, whose design establishes a continuous relationship between the interior spaces and the surrounding landscape. Soft geometries, organic forms, and carefully proportioned rooms create an atmosphere that feels both intimate and visually connected, allowing natural light and lake views to become integral components of the dining experience.

As architect Flaviano Capriotti explains, “From the outset, the project aimed to establish an authentic dialogue with the lake. The idea was to translate the defining qualities of the landscape – the depth of the water, the presence of the mountains and the textures of the surrounding vegetation – into architectural elements that shape the space.” This philosophy is reflected throughout the restaurant, where materials, colours, and proportions echo the natural surroundings without directly imitating them.

The ground floor accommodates NIÒBĒ Garden, an elegant bistrot organised around a sculptural bar whose flowing forms establish the rhythm of the space. A generous curved seating element encourages movement and conversation while maintaining uninterrupted visual connections with both the private gardens and the lakeside setting, creating an informal environment suited to dining throughout the day.

Above, NIÒBĒ al Lago presents a more intimate fine-dining experience within a 32-seat restaurant characterised by warm natural tones and carefully considered spatial composition. Every detail has been designed to encourage an atmosphere of quiet refinement while allowing the surrounding scenery to remain a constant visual presence.

Wine occupies a central role within the overall concept. Rather than functioning solely as storage, the open wine cellar forms one of the restaurant’s defining architectural features, integrating the collection directly into the dining environment. The circular Wine Room, designed for six guests, is enclosed by elegant elm shelving displaying more than six hundred carefully selected labels, transforming the collection into an immersive architectural installation. A separate private dining room accommodates up to ten guests for exclusive gatherings and special occasions.

The culinary offering reflects the same commitment to regional identity. Available through both à la carte selections and tasting menus, the cuisine celebrates the produce of Lake Como through refined contemporary techniques. Signature dishes include Woodland Egg cooked at 63°C with potato espuma, black truffle, and edible flowers; raw scallop accompanied by caviar and stracchino cheese; prawn ravioli served with Mazara del Vallo red prawn consommé; and stuffed pappardella filled with vicciola, pumpkin, tomato miso, and smoked provola fondue.

The wine programme complements this approach with a cellar comprising more than six hundred labels representing Italy alongside internationally respected wine regions. Particular attention has been given to prestigious Champagne houses while also highlighting carefully selected independent producers, creating pairings that enhance the seasonal character of the cuisine.

During the day, NIÒBĒ Garden welcomes guests with seasonal business lunches overlooking the gardens before gradually transitioning into an evening destination centred on aperitifs, Champagne, signature cocktails, selected wines, and small sharing plates. Through its combination of architecture, gastronomy, and wine culture, NIÒBĒ presents a contemporary interpretation of Lake Como hospitality, where the surrounding landscape remains the defining inspiration behind every aspect of the guest experience.
